The Big Debate

So...... Here is the big debate....

I have found that a lot of places still do buffets... I think this is still very 1980's. Think about it this is the kind of things our parents grew up with.

No my question is do you really think we should still use it. Lets see.

We when I think about buffet I always think of a carvery station, in my opinion is a horrible idea. Cooking a whole leg of lam or something and then letting it stand the whole duration on the hot plate and on under those heating lights. Plane and simple it will dry out with in the 1st hour and you will be eating on leather by the end of the night. You need to do your planning really great here choose item that will not dry out that quick, or make more dishes where you use sauces in them so that they don't dry out. Most places think buffet is a quick simple thing but it is not a lot of thought need to go in to it, if not you will end up with a whole lot of food waste. Another great tip is that a sneeze guard is a must, I don't want to catch all random illnesses when I am  out for a dinner.

Speaking of illnesses, when doing buffet it is always a risk that your food items will go in to the Temp danger zone!!!! Make sure your hot food stays hot and your cold food remains cold  

On the other had buffets can be very beneficial when doing big functions such as wedding compared to plated dinners.

In shot I will say buffet can be a great idea but you need to stay on top of it.

To recap :

  1. Choose the tight items
  2. Keep it clean
  3. Watch out for food illness
  4. And always keep your options open, change it up a bid. Always try new item don't keep it boring

Change is coming

So it has been an eventful year all full of exciting moment. Well I finally graduated form The International Hotel School and my life is fully on a roll.

Well I have decided no to take my bags and go over seas, thing just did not seem right at the moment. I have decided it is better rather to stay here build up some experience and maybe after a year or so I will go.
Just think about it would you rather stay in SA and get a manager salary or go over seas and stay in the same old job and position for the rest of your live, in shot I think all these program that can take you over seas are great but there is just not any growth that side.


Meanwhile in the Life off of an ex Hospitality student and now full on Hospitality worker I have found out some new and exciting things. I have noticed that sleep will become your best friend and that you will do anything for a quick nap, also you will learn to sleep anywhere even if it is in the staff bathrooms. All it worth it thou, not all doom and gloom. If you really love the Hospitality industry you wont mind it.

Being in this industry means your love life will have to take a back seat for a while and that you wont have a proper relationship. Why you ask. Well the people out side our industry just don't understand that Hospitality is our relationship and that our live style in not a 8 to 5 Monday to Friday job. So be prepared for being a single person for a while.

Fun day in Class

Friends..........

There is will always be that special bunch of people in you life who bring out the crayze side of you. Never let them go cause they will be useful in this industry. After a long day of work you will need them to help you to get your mind of work.

I have never in my life laughed so hard and done so much random thing in my life. It is a real good way to get rid of stress and you just help you to unwind. Screw a class of wine and a good movie, there are way more better thing to do in you spare time.

Go out ans live a little, be random. Go to a new restaurant order something that you will never order. Go to a new night club and make some new friends. Break your habits do not get in to a rutine that will be the worst mistake of your life.

To all the people who have that great friends out there........ hold on to them, never let them go cause that is the real jewel of life.

Social networking

DON''T BURN THE BRIDGE

In the Hospitality industry I have learned that it is a very tight netted community. Everyone knows everyone. It is quite ironic to say that because this is one of the world largest industry but yet we stay so close with everyone. The simple fact of this is WORD OF MOUTH. Word of mouth is the must powerful fool in this industry in can best you best tool ever or it can rune your whole entire life.

I'm not saying to keep in contact with all you fellow workers and friends in this industry but never leave a job on a bad impression. Word of you impression will travel world wide and most likely  you will never  be ale to recover form that. I have first had experience on this. I'm not going to say name of place but ignorance is a fool.

Yes back in the day in 1st year we all thought we knew everything and nobody back teach you anything but I learned the hard way. Lucky through hard work and some bid of explaining I was able to recover my name.

I you wanna make it big in this industry be come more active go to place see people. Get your name out there. Work some charity functions, let people see what you can do make them aware of what you are who you are. Never back down for a challenge. Do social networking go and meet people because that is the way you get you name out there


Introduction

There has always been a specific position for every one in the world, always a specific job to do for everyone. Well luckily for me mine was in the hospitality industry. Im not going bore all of you will my life history and how I got here and all that.

My basic mission in this blog is to tell the work about what is like living and breathing Hospitality.
To start off just to give you a brief break down I'm still studying hospitality and I'm in my last year now. I have worked at a couple a famous hotels in South Africa and worked in this industry for about 6 year now.

To all of you who would like to do this for a living be warned this is not for the faint of heart. Don't think this is a paid holiday kind of job. You need to be committed to this industry or ells you are never going to love it. It takes hard work can dedication to become an really in this industry. Never in my life have I been so tired, stressed, emotional and overworked in my life but you know what it worth it.

The people you meet and places you see make it all seem like you are living the dream even thou you work a basic 10-12 hours shift sometimes. For dining with guest in the valleys of Magaliesburg to roaming the forests of the Drakensberg. 


I will be here to give you some advise and keep you update on new trends and vads in the Hospitality industry and give you the 411 of you so survive this Industry
