The Big Debate

So...... Here is the big debate....

I have found that a lot of places still do buffets... I think this is still very 1980's. Think about it this is the kind of things our parents grew up with.

No my question is do you really think we should still use it. Lets see.

We when I think about buffet I always think of a carvery station, in my opinion is a horrible idea. Cooking a whole leg of lam or something and then letting it stand the whole duration on the hot plate and on under those heating lights. Plane and simple it will dry out with in the 1st hour and you will be eating on leather by the end of the night. You need to do your planning really great here choose item that will not dry out that quick, or make more dishes where you use sauces in them so that they don't dry out. Most places think buffet is a quick simple thing but it is not a lot of thought need to go in to it, if not you will end up with a whole lot of food waste. Another great tip is that a sneeze guard is a must, I don't want to catch all random illnesses when I am  out for a dinner.

Speaking of illnesses, when doing buffet it is always a risk that your food items will go in to the Temp danger zone!!!! Make sure your hot food stays hot and your cold food remains cold  

On the other had buffets can be very beneficial when doing big functions such as wedding compared to plated dinners.

In shot I will say buffet can be a great idea but you need to stay on top of it.

  1. Choose the tight items
  2. Keep it clean
  3. Watch out for food illness
  4. And always keep your options open, change it up a bid. Always try new item don't keep it boring

Change is coming

So it has been an eventful year all full of exciting moment. Well I finally graduated form The International Hotel School and my life is fully on a roll.

Well I have decided no to take my bags and go over seas, thing just did not seem right at the moment. I have decided it is better rather to stay here build up some experience and maybe after a year or so I will go.
Just think about it would you rather stay in SA and get a manager salary or go over seas and stay in the same old job and position for the rest of your live, in shot I think all these program that can take you over seas are great but there is just not any growth that side.


Meanwhile in the Life off of an ex Hospitality student and now full on Hospitality worker I have found out some new and exciting things. I have noticed that sleep will become your best friend and that you will do anything for a quick nap, also you will learn to sleep anywhere even if it is in the staff bathrooms. All it worth it thou, not all doom and gloom. If you really love the Hospitality industry you wont mind it.

Being in this industry means your love life will have to take a back seat for a while and that you wont have a proper relationship. Why you ask. Well the people out side our industry just don't understand that Hospitality is our relationship and that our live style in not a 8 to 5 Monday to Friday job. So be prepared for being a single person for a while.


Just some basic tips you need to know. I will keep all off you posted for new tips you I get some more. Also look out for my posts all about dining out and how I experience it and some new un found places you will love
